The Taco Bill Mexican Restaurant in South Melbourne was opened in January 1975 by Vicki & Stan Teschke, 'Taco Bill' Chilcote and two other pioneers in the Mexican food industry.

In August 1987 Stan & Vicki purchased Bill's share of the restaurant and Taco Bill Mexican Restaurants Australia which operates all of the Taco Bill franchises. In September 2002 Tom Kartel, a Taco Bill team member since 1985 and franchisee since 1994, became a 50% partner in both the franchisor company and the South Melbourne restaurant. Tom is the managing partner of the restaurant.
